happy valentines day friends! what a lovely weekend it was here in charlotte. the sun was shining and it was around 60 degrees every day. i now officially have spring fever, so let's hope it sticks around! here are a few peeks at what my weekend looked like...

getting back on track

this past week and a half i've been making a real effort to get myself back on the good health track that i was on before winter hit. for the past 4 months or so i had quit exercising, began eating all sorts of junky sweets, and just generally stopped taking care of my body. this is fully expected around the holidays, but come on, enough is enough!

i've gotten my butt back to the gym, and started hitting up yoga again. i forgot how much i absolutely love yoga and how it makes me sore in all new places when i haven't done it for awhile. definitely in that oh so good way though! in a grand effort to also get my eating habits back on track, i decided to completely cut sugar, simple carbs and processed foods out of my diet for 21 days. why 21 days you ask? well evan and i, along with my entire family, are bound for a voyage on this amazing ship! we booked this trip 2 years ago, before the ship was even built, and i can't believe it's almost here! i want to look and feel fabulous while sunning myself, hence the healthy boot camp!

this definitely isn't a crash diet to lose weight kinda thing, i would never recommend that! this is me making an effort to remove the harmful things from my diet, things that do nothing good for my body, and replace them with fresh, energizing, good for me things! in just the 10 days i've been doing this i already have more energy, i stopped needing caffeine in the morning, i'm sleeping better, i'm learning new recipes, and i'm generally just feeling good about treating my body with the respect it deserves. we only get one of these things, so why junk it up!

a lot of this was inspired by my purchasing the "crazy sexy diet" book. honestly i don't feel like it's fair calling it a diet book, because it's not. it should be called the "crazy sexy lifestyle" book. it's all about making daily choices to put better things into yourself, so as to get more out of yourself. it's really a great, informative, enjoyable read and i certainly recommend it!

so here's to our health!

Monkey & Squirrel... at bath time!

i thought i'd just share this little video of my blogs namesake. this is Monkey & Squirrel! Monkey is the black kitty on the receiving end of Squirrels bath. Squirrel is such a good little momma hen, she's always keeping Monkey clean and yelling at him when he gets a bit too crazy. these kitties keep life entertaining!
pardon the darkness of the video. we were having some evening snuggles when this occurred and it's the best i could get with my phone :)

vegan comfort cooking

one of the things that i'm striving for in life is to actually use all of the cookbooks that evan and i own. currently they sit in a cabinet and generally only see the light of day about 2 or 3 times a year. terrible, i know! i would love to be the kind of person that plans out meals for the week (or at least for that day) and isn't rummaging through the cabinets at 8pm wondering what evan and i should eat for dinner. i really love cooking, so this shouldn't be such a big task. it's just that i'm not that much of a planner. i'm kinda a fly by the seat of my pants type of gal.
anywho, for the past few days i've been going through our cookbooks and post-it noting everything that i wanted to try sooner rather then later. i made a list, went shopping, and got it all checked off. kudos to me! so without further adieu, i give you, last nights dinner!
chickpea broccoli casserole

admittedly it's not the prettiest of things, but it was so super delicious and yummy! the chickpeas take on a creamy mashed potato effect and it's like the ultimate comfort food!

these were knock my socks off gooooood! i've been craving kale lately, and i also have a love for tahini that just can't be described, so this really hit the spot for me!
i definitely recommend giving this meal a go. it did take a good deal of prep time, but it was absolutely worth it! i've also got enough casserole left over for another 2 dinners! gotta love that :)
here's the casserole...

3 cans of chickpeas, rinsed and drained
1 large onion, thinly sliced
3 carrots grated, about 3 cups
1 head of broccoli chopped, about 4 cups
2 tablespoons chopped chives
1/2 a cup of bread crumbs
3 tablespoons olive oil
1 cup veggie broth
1 tsp salt

preheat oven to 350

first, mash up the chickpeas using either a potato masher or a large fork. this takes a few minutes, but not every single chickpea needs to be broken down. think chunky mashed potatoes! next add the onion, carrot, broccoli, and chives and mix it up. then add bread crumbs, mix. add oil, and mix again. last add broth and salt and give it one last stir up. i also added a few splashes of braggs liquid aminos at this point just to give it a little extra nums! dump it all into a 9" x 13" casserole dish and press firmly. cover with foil and bake for 45 mins. remove foil and bake for another 15 mins. at this point it's all set to eat. i however put it on broil for just a few more mins to really get a good crisp on top. apparently a lot of people say that this is somewhat bland, but it can certainly be dressed up anyway you like. i thought it was absolutely perfect though, just the way it is! (evan added salt, but that's to be expected)

and now the garlicky kale...

2 or 3 cloves of garlic (they suggest 5 or 6, but i thought less was just fine)
3 tablespoons of olive oil
1 bunch of kale, rinsed and chopped (remove stems from below the leaf and also if they're more then 1/4" thick)

saute garlic in olive oil for a few mins until it's golden brown. add kale and a splash of water. toss it around and get it all coated in the delicious goodness. i also added another splash of braggs here. i just love it! cook about 5 mins and serve with tahini dressing...

the dressing...

8 tsps olive oil
3 cloves garlic chopped
1/2 a cup of tahini
2 tsps balsamic vinegar
1/2 a tsp of salt
juice of one lemon
a bit of black pepper
1/2 tsp of paprika (which i was out of and it was just fine anyway)
1/4 cup lightly packed fresh parsley
1/2 cup cold water

heat garlic in 6 tsps of the olive oil just until it starts smelling yummy. place the garlic, and everything else except the parsley, in a blender and blend until smooth. add parsley and pulse a few more times. stick it in the fridge for at least half and hour before eating. a little bit more water can be added if it's too thick.

vegan chicken salad

the other night i whipped up a little vegan chicken salad, which i hadn't done in quite some time, and it was so super yummy i just had to share it. this is quite possibly one of the easiest things to make because it doesn't require any measuring whatsoever... well at least the way i do it :)
INGREDIENTS-
TVP (textured vegetable protein)- i get it in our health food stores bulk section and that's generally the cheapest, but you can also buy it bagged.
Vegenaise- that's vegan mayo, if it wasn't obvious by the name
Carrots
Celery
Apple Cider Vinegar
Garlic Powder
Onion Powder
Salt
Pepper
first you need to reconstitute the TVP. to do this just pour boiling water over it slowly. you just want to add enough to get it all wet, but not create a soupy mess. add more as it absorbs if needed. if you've never eaten TVP, it's an amazing meat substitute. really great texture and can even fool the most devout meat eater!

while that's cooling, you can do the rest of your prep work. chop up come celery. i like a lot in mine, but you can add as much as you see fit. a little tip... you can also use celery salt instead if you'd like the flavor but not the crunch :) then it's carrot time! i use a cheese grater for my carrots. much easier and quicker then chopping! also just use as much or as little as you like...

once your TVP is reconstituted and cooled you can put it all together. add however much vegenaise you would like. it does take a good deal to coat everything. then add a splash of apple cider vinegar. add garlic powder, onion powder, salt and pepper to taste.

at this point it's all ready to be gobbled up!

the first night evan and i had it on toasted bread with some lettuce and tomato. super yummer! then the next day we had it for lunch on a bed of greens, which is my personal fave. any way you eat it, it never disappoints!

last night while cleaning up the labels on my past posts (to make my blog searchable by topic), i noticed that i never shared a picture of my most recent tattoo. it's a dang shame too because it's my absolute favorite to date! i had been waiting for it to heal up to get a good shot, but that was a few months ago now and i just completely forgot about it.

DIY faux porcelain milk bottles and pom pom flowers

i have been head over heals for the porcelain milk bottles (like these) that i've been spotting on numerous design blogs and such. as much as i would absolutely love to own a gazillion of them, i simply can't find room in my ever so limited budget to splurge on a tiny bit of decor. here's the good news though... i've come up with a "fake it till you make it" solution!

all you need is...

*milk bottles (or any glass bottle really)
*spray primer (i love kilz and nothing else!)

and for the pom pom flowers shown below...

*pom poms
*glue (almost any will do here)
*twigs (free in your backyard... or perhaps your neighbors)

and VOILA!!!

nibbles & bits from the long weekend

oh oh oh what a weekend! there were salvage yards, thrift stores, bowling, dancing (even if only for a video game), food and friends. all the ingredients needed to bake up some good times! the main goal of this weekend though was to get a bit of decorating and organizing done around our humble little home. i had a little mental list of things that i would love to find while thrifting and salvaging with my partner in crime, steph, and i must say i was pretty darn successful! these bargains weren't too shabby either!

this isn't so much a find as it is a creation. evan made me this little iphone dock out of an old cigar box i had lying around. i love that man! oh and i've been informed that the object next to it looks somewhat questionable. it's a rusty cast iron vintage claw foot... i swear!

and the best part of all, crates crates crates! you may recall my post last week about the wonders of crate decorating. well here's my take on it! i got all of these for 20 bucks and evan ever so lovingly hung them up for me. i'm so so so stoked on this! i just want to sit in my studio all day and look at them. good stuff!
also for your viewing pleasure is this little video i made of our weekend activities. i recently purchased the 8mm app for my iphone and i now make videos of EVERYTHING! it's so much fun to play with. i highly recommend it! be sure to check out the scene showing where i found the above mentioned crates. it's unbelievable what i found. a decorators dream! enjoy...

lately i have a love for vintage lace curtains that just can't be explained. so much so that i took a little trip to the thrift store yesterday to hunt for the perfect set for our bedroom. lucky me... i found them! we haven't hung them up yet, and evan still really isn't sure how he feels about them, so today i've pulled some of my favorite lacy photos to show that they really can be so so very gooooood!!!

vegan pumpkin chocolate chip cupcakes


one of my all time favorite little treats to make during the fall/winter months are pumpkin chocolate chip cupcakes (to me they seem more muffin like though) from the vegan cupcakes take over the world cookbook.

they are so super easy to whip up and equally super yummy! most of the ingredients are things that you probably already have in your pantry, and i make sure to keep chocolate chips and canned pumpkin on hand at all times for whenever this craving occurs!

so this morning when the craving hit, i couldn't help but get in touch with my inner betty crocker!

topped with a bit of cinnamon sugar glaze, and along with a cup of tea, they made for quite a delightful little breakfast!

the recipe...

1 cup canned pumpkin
1/3 cup oil
1 c granulated sugar
1/4 cup soy milk
1 tsp. vanilla extract
1 1/4 c. all-purpose flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp ground cinnamon
1/4 tsp salt
1/2 cup chocolate chips

1. preheat oven to 350.

2. in a med. bowl, stir together pumpkin, oil, sugar, soy milk and vanilla. Sift in the flour, baking powder, baking soda, cinnamon and salt. Stir together with a fork -- don't use a mixer, as it will make the batter gummy. Once well combined, fold in the chocolate chips.

3. Fill cupcake liners two-thirds full. Bake for 22 to 24 minutes (or approx 14 mins for mini's). Transfer to a wire rack and let fullly cool before icing.

CINNAMON ICING
1/2 c. confectioners sugar
1/2 teaspoon ground cinnamon
2 T. margarine, melted
1 T. soy milk
1/2 tsp. vanilla extract

Place sugar & cinn. in small bowl. Add margarine, soy milk & vanilla and stir with a fork until smooth. Keep at room temp until ready to use. The mix should look opaque and honey brown; if it's glistening a lot or looks too liquid, add a little conf. sugar.

happy new year friends! i'm feeling very well rested after a good little bit away enjoying time with friends and family. i hope you all enjoyed a fabulous holiday as well! 2011 seems to be off to a bit of a rocky start, what with the transmission in my car giving up today, but i've still got high hopes for this year ahead. with my sights set on the future i thought it only proper to take a moment today and enjoy some of my favorite moments from this past year. 2010 was one for the records in my opinion! here's my own personal highlight reel...

i'm currently trying to grow my hair out to this stage, and anyone who has ever had super short hair knows what a daunting task this can be. the front of my hair is actually already at this point, it's just the back that i have to keep letting grow out. i'm getting a little trim up this afternoon and i just need to keep my eye on the prize so as to not walk in there and have my gal steph just chop it off. stay strong jenn... stay strong!

DIY crafty goodness!

i'm so excited for tonight! my sister-in-law and i are having a little crafty get together to make some fun holiday goodies. it's funny how i never get tired of making things. i was definitely afraid that when i started being a full time crafter i would get burnt out on the whole thing and not want to do it in my spare time at all. that seems to be the exact opposite of how it's turned out though. the more i do, the more i want to do more! my brain is flooded at all times with fun little crafts to work on and i just wish i had time to do them all!
here are two of the projects that i've already purchased the supplies for. first is this adorable star garland, spotted on creature comforts. i'm in love with this one big time and might just keep it up in my house all year long! check out the full tutorial here. i think i'll even just poke holes in some of them and use them on gifts or on our tree!

the second fun little goodie is also from creature comforts. i swear, that blog is dangerous for me. i want to do every single project on there! these gingerbread gift tags (or ornaments) seem super fun and easy. anytime i can put "icing" on a creation, that's a winner in my book!

if these two are a success i may just move onto some of my other favorites. i'm over the moon for this pom-pom garland, seen hanging on the ceiling here, that i originally spotted on bloesem. it's so very bright, and absolutely adorable! i think it would even be amazing in all white for a wintery feel. stringing pom-poms... that's totally doable! this post on design sponge has got my brain going overtime with all these amazing ideas! this paper garland would be a fabulous little touch to any gift under the tree. it's making me realize that there are few things that a bit of string and paper can't spruce up. this is one post to definitely check out!

on all of my crafty hunts i also came across a few great resources that i MUST add to my collection. lotta jansdotter, the ever amazing scandinavian designer, has a wonderful paper crafts book that is calling to me! i now want paper pinwheels everywhere! the beehives and bunting are ridiculously cute as well!

weekend in review...

welp, Rock & Shop was AMAZING! i had so much fun and it was a fabulously successful event. it ended up snowing all day up in durham, but not even the fluffy flakes could keep the shoppers away. if you're in the area for the next one, i definitely recommend giving it a go. here are a few pics i snapped up of my table real quick before the event got going...

it was so busy the entire day that i didn't even get to sneak away from my booth to snap pics of everyone else. i guess that's a good thing, but i would have loved to share more. they should be posting some pics up on their flickr site at some point, so feel free to browse those too :)

in other positively giddy news, remember last week when i said i was now on the hunt for the perfect christmas stockings. well, i've already found them! on sunday evan and i went to sleepy poet, here in charlotte, with some friends just to do a little browsing. i had never been there before and had heard some amazing things about it. after about 2 hours of meandering we were getting about ready to head out. that's when i saw them. these two absolutely adorable, vintage quilted stockings. at just 8 bucks each, i simply couldn't say no!

eeeep... i still get so excited looking at them! so here is our little festive nook in the living room. it's so cozy when we've got the little fireplace on, with a pup curled up in front of it. i'm pretty pleased as punch about it all!

hope everyone had just as fantastic of a weekend. i think i shall go make a bit of hot cocoa now with these vegan marshmallows that we picked up, and settle in for a little relaxation time. it's the little things that make winter a.o.k!
